Happy Belated Turkey Day!

So I know Thanksgiving was last week, but it's never too late to say what I'm thankful for is it? I think that when people are diagnosed with Celiac Disease it may seem like the end of the world. No flour? No cookies? cake? gravy? Finding out all these random things that we are allergic seems overwhelming and just plain awful. But I seriously have to be thankful for it. When I started to really get sick I didn't know what was wrong with me. As a high school teenager I just attributed it to nerves, puberty, all that fun stuff. But my parents, of course, thought the worst. I am thankful that they can rest easy that I am finally healing and feeling so much healthier. I feel like I have a large part of my life back that I didn't even know I was missing.People are sometimes so eager to play the "woe is me" card but I think we all need to take this time of year to really reflect on how far we've come in health, in understanding, and in acceptance.

Plus, I had an entire gluten free Thanksgiving! Well...almost. Unknowingly my aunt cooked the turkey with some kind of gluten filled broth or something so that was not a fun time. But other than that, it was all good. Gluten free stuffing (I'll post the recipe at a later date!), vegetables, antipasto, and yes, dessert. Mmm I love the holidays...
